Baked Cauliflower Canapés and Broccoli Bites

These super nutritious veggies make a great crunchy snack to dip in your favorite hummus, guacamole or dressing. Enjoy these instead of chips or popcorn for a satisfying and healthy snack or side dish.

Ingredients:

  • 1 head each organic cauliflower and broccoli, chopped into bite-sized pieces 
  • 4 Tbsp extra-virgin olive oil 
  • 4 tsp garlic, crushed and chopped 
  • 1 Tbsp smoked paprika 
  • 1 tsp sea salt (or to taste)

 Directions:

  1. Preheat oven to 400 degrees.
  2. Rinse and chop cauliflower and broccoli into slightly-oversized bite-sized pieces and pat or air dry.
  3. In a large mixing bowl, whisk together the olive oil and chopped garlic.
  4. Then place the chopped cauliflower and broccoli in the bowl.
  5. Using a large spoon, mix the veggies with the oil and garlic until evenly coated. (Add more oil if necessary).
  6. Place the seasoned vegetables in a large, 9x13 baking dish. (You may need two baking dishes).
  7. Sprinkle with smoked paprika and salt.
  8. Place baking dishes in oven; bake for 30-40 minutes, until golden brown and cooked through but still crunchy.
  9. When cooking time is done, remove from oven and allow to cool.
  10. Arrange cauliflower and broccoli pieces on a serving platter.
  11. Spear vegetables with toothpicks for easy pick-up.
  12. You can also serve with hummus or Cilantro Macadamia Pesto.
