Greek Salad with Wild Salmon

Here’s an easy recipe that’s nutrient dense, flavorful and looks nice on any summer table.

Ingredients:

  • 2 tbsps Extra Virgin Olive Oil

  • 1/4 cup Lemon Juice (large, juiced)

  • 1 Clove Garlic (minced)

  • 1/2 tsp Oregano (dried)

  • 1/2 tsp Dijon Mustard

  • 1/2 tsp Sea Salt

  • 1/2 tsp Black Pepper (to taste)

  • 10 ozs Canned Wild Salmon (drained - I like Wild Planet brand) or if you have the time, use a grilled or pan-fried and chilled filet of salmon

  • 1/2 head Romaine Lettuce (separated into leaves and washed)

  • 1 Medium Tomato (chopped)

  • 1 Small Cucumber (thinly sliced or diced)

  • 1/2 Medium Avocado (large, sliced)

  • 1/4 cup Red Onion (sliced)

  • 1/3 cup Sheep’s Milk Feta Cheese (crumbled) or vegan feta of your choice

Preparation:

  1. In a small bowl, whisk together the oil, lemon juice, salt, and pepper.

  2. Arrange the remaining ingredients on a serving platter. Drizzle with the dressing and enjoy!
